Hocho - Suminagashi Ref: H-Sug

These knives come in 4 lengths and all have beautiful damascas steel blades.
The process of creating the visible pattern of folded steel is one that has its origin in the early Japanese blacksmiths skill of sword making.
This is now a mechanical process with many fewer folds in the steel but no less effect as these knives do look fantastic. They also cut very well. The patterned steel sandwiches a double bevelled cutting edge steel that will take a razor sharp cutting edge. Each blade has a maximum thickness of 2.5mm except for the smallest which has a 1.8mm max blade thickness.

A shaped blackwood handle is rivetted into the blade handle for food hygene safety, added strength and longevity.

These knives are "Gyuto-bocho" for general food preparation. They are easy to sharpen using light equal shallow angle strokes on either fine diamond, fine ceramic or good quality water or oil stones (see suggestions to follow). Traditionally, all Japanese edge tools are coated in a light covering of camelia oil to protect the blades from oxidation (see below).

Each knife is supplied in a black presentation case. The knives make excellent gifts. Made in Japan.

Some options for you. A sharpening medium is personal choice - some people like the speed of a diamond stone (but remember these are not finishing stones), some prefer traditional oilstones and many now use either ceramic or water stones. All work very well but require various lubricants (see below).

Diamond Stone Ref: DWS/W8/F

A single-sided diamond impregnated stone. This is the best diamond stone on the market - British made Ideal for up to kitchen knives that have lost their edge. Supplied with a leather pouch, cleaning block and non-slip mat. Also ideal for workshop use, for chisels, plane blades etc.
